Ever notice how a good meal somehow tastes even better with the right song playing? Turns out that’s not just in your head, or rather, it actually is. Researchers at the University of Copenhagen found that your brain responds more strongly to taste when music plays alongside it, compared to tasting something in silence. The study, published in Nature, offers the first brain imaging proof of something scientists call sonic seasoning.

How can music change the way your brain tastes food?

The study scanned 28 participants using functional magnetic resonance imaging (fMRI) to see how their brains reacted to music and taste. For the experiment, researchers tested three setups: only music, only taste, and both experienced together. A device delivered small amounts of sweet or sour liquid onto participants’ tongues while they listened to matching soundtracks.

When music and taste played together, the brain regions that are tied to taste and sensory processing lit up more than when taste was experienced alone. This supports “sonic seasoning,” the idea that sound can shape how we experience flavor.

Sweet music paired with sweet taste showed the strongest combined effect, while sour pairings didn’t show the same boost. Afterward, participants rated how pleasant and intense each combination felt, giving researchers real feedback to back up the brain scan results.

Can the right music really make the food taste better?

Senior author Janice Wang says flavor is ultimately an experience your brain creates, not just something your tongue picks up on. Researchers believe this could help restaurants, canteens, and even hospitals improve meals without changing a single ingredient, which could be especially helpful for patients at risk of malnutrition.

That said, the sample size was small and not very diverse, and effects were modest overall, so researchers say larger studies are needed before anyone starts handing out curated dinner playlists as medical advice.
